Il limoncello di Léone

Cheers! My Little Limoncello Factory is closed. Thanks to Sante and Susan, who gave us a crate of lemons from their garden when we left Cittaducale. A bit of dishwashing now, everything is sticky. The lemon peels have been resting in the preserving bottles on the pure alcohol for a month and a half. Three weeks of maceration, should be enough, according to most recipes but after returning from Bella Italia, we had another job in Drenthe. Then again; a few months can’t hurt, according to the liqueur master, given this contribution to the lively discussion on limoncello-maken.nl:
Help… I let the lemon peels infuse for 3 months (instead of 3 weeks) in pure alcohol. Can I still use this?
Liqueurmeester: ‘This is no problem at all. The lemon oil has had optimal time to dissolve. Nice finish and enjoy!
No, you can’t come and taste them, no, I’m not going to host tasting events, and no, they’re not for sale. Try it yourself, very nice work. Cheers!
P.s. Next time we’ll buy the pure alcohol in Italy, where the price for a bottle of one liter is less than 10 Euros. Overt here, due to taxes, 32 Euros. But then again, I’ve turned them into six bottles of heavenly limoncello, so . . . 🙂
